I’ve added the steamed egg, congee, gai lan, and mapo tofu to our regular rotation. Love the simplicity of these dishes. Also the seaweed soup.

It is always such a pleasure to be invited into your home and watch your dad make such good food. Then to share with the family is great! And guess what? My dad would always make a stupid pun asking if you wanted the egg and shrimp dish. He'd say, "so you want to bully people, huh?" since "ha yun" means exactly that.
Probably the first time I ever heard/understood a Chinese dad joke.

If unable to use corn and wheat starch/vlour can rice or potato starch/flour be substituted? Or is there something else besides arrowroot?

that shrimp and egg dish is my dad's favourite. He doesn't cook but that was the one dish he perfected and makes better than my mom. Still to his day, nobody cooks it better than my dad. It's truly a tasty dish when its moist with plump juicy shrimps.
