INGREDIENTS:
BATCH 1️⃣
1-2 Onions or 3-5 shallots
3-5-6… cloves Garlic – minced
3 tbsp Curry paste
2-3 tbsp Ginger – grated or liquid, can also use ginger powder
BATCH 2️⃣
1 medium Sweet Potato – diced
1 medium or large Eggplant aka Aubergine – diced
1 can of Coconut Milk – choose light one is cholesterol is your concern
1.5 tbsp Soy Sauce
BATCH 3️⃣
1 large Red Bell Pepper – diced
½ cup Green Beans – chopped into 1.5-3 cm pieces
1 thing of Tofu – pressed to drain, cut into pieces
BATCH 4️⃣
¼ cup of cut Basil Leaves or 2-3 tbsp of Liquid Basil
Juice of ½ Lime
METHOD
Start with a saute mode and a splash of water in your pot ⏩ add BATCH 1️⃣- mix & simmer for 1 minute ⏩Add BATCH 2️⃣
⏩Close the lid, seal, High pressure, 4 minutes 🕐
⏩Quick release ⏩add BATCH 3️⃣⏩Close the lid, seal, Low pressure for 2 minutes 🕐
⏩Add BATCH 4️⃣- mix well, leave it in a pot for 1-2 minutes until the flavors are fused together
