    Your lunch looks delicious! My mom makes a ginger curry carrot soup that's delicious. I often make squash soup using leftover squash that we roasted with carrots, onions, garlic and then whatever spice I decide on like ginger, curry, chili etc.. water or broth. I puree it and stir in some Greek yogurt to give it a creamy texture. Could easily add some sweet or regular potatoes to make it more filling.
