Instant Pot Potato Soup Recipe below⬇️
2 chicken & apple sausage links, diced
2 garlic cloves minced
Sauté together in the instant pot using the medium heat sauté function until sausage is lightly browned.
4-5 medium golden potatoes, diced
3/4 cup carrots, chopped
2 celery ribs, chopped
3 cups chicken broth
1 1/2 Tsp salt (more or less to taste)
1/2 Tsp pepper (more or less to taste)
1/2 Tsp dried thyme
1 Tsp dried parsley
1/2 Tsp onion powder
Add ingredients to instant pot and cook for 3 minutes using the manual or pressure cook button. Let sit 3-5 minutes before doing a quick release.
1 cup heavy cream
2 Tbs corn starch
Mix into a slurry and stir into soup. Mix until well combined. Soup will start to thicken after a few minutes.
