@Indigo Nili for Sara DeYoung's chocolate mint fudge, I replace the xylitol with allulose when I make it and have never had an issue with a grainy texture. It is very smooth, and the texture is spot on like s.a.d. fudge. I've had success with using that recipe with other flavors as well. The banana fudge recipe is a quick & easy one, though, so it would work better for your daughter making it.
